Coconut and sweet potato stew with cauliflower rice for tea tonight!
I’m not a big stew fan, so this one turned out to be more of a bright, curry type thing. And I made cauliflower rice to go with it, as it already had sweet potatoes and chickpeas in :) This would probably serve around 3 - 4 people.
approx 1 - 2 teaspoons coconut oil
3 cloves of garlic
2 sweet potatoes (cubed)
1 tablespoon tomato puree
1 teaspoon madras curry powder
1 teaspoon garam masala
200ml veg stock (approx!)
1 tin coconut milk
1/2 tin chickpeas
1/2 head of broccoli
8 baby corns
1/2 bag spinach
1/2 a large cauliflower
Dice the onion up and melt the oil in the pan, add the onion and fried until soft, add the garlic cook for a few minutes. Stir in the sweet potato cubes, curry powder, garam masala, tomato puree. Add the stock and coconut milk, cook covered for about 10 minutes or so.
Then stir in the broccoli and baby corns, season and cook uncovered until the sauce is thick and potatoes and broccoli are done. Just before the end wilt the spinach on top and stir through. I think next time I make this I would add more spice.
For the cauliflower rice, I just kinda guessed how to make it, so if you want to might want to try a more tested recipe, there’s a few out there! I popped the cauliflower in the blender, once it looked quite ‘rice like’ I put it in a sauce pan with maybe a few tablespoons of veg stock. I didn’t add too much as I didn’t want it to become mushy. I seasoned it and then cooked it for about 5 minutes. :s It turned out pretty well though! Quite rice like and fluffy :D
